Kid-Friendly Chicken Fingers

Sorry for the long break, I promise to get back to recipe blogging!

Big's two favorite foods are quesadillas, and chicken nuggets. Whenever she helps make the menu, one of these things are guaranteed to be on it. So instead of freezer nuggets, which just don't satisfy, we made these yummy kid-friendly chicken fingers.


Chicken Fingers:

1 cup corn flakes cereal - crushed
1 cup plain bread crumbs
2 Tbsp brown sugar
1 tsp salt
1/2 tsp black pepper
1/2 tsp season salt
3 Tbsp vegetable oil
1/3 cup flour
2 eggs beaten
1 1/2 lb chicken breast cut into 2 inch strips

Preheat oven to 375 degrees Fahrenheit.

Make breading: Mix crushed corn flakes, bread crumbs, brown sugar, salt, pepper and season salt together in a large wide dish (I use pie pans for this). Drizzle vegetable oil evenly over the breading. Toss to mix in.

Pour flour into another wide dish.

Pour beaten eggs into a third. Line up on your counter to make your dipping station.
Roll chicken in flour, dip in egg mixture, then coat in breading mixture. Place on a greased baking sheet (or use parchment paper).

When all are coated, bake 15 minutes, or until golden brown and done in the middle.

YUM! We served with sweet potato fries and made fry sauce to dip them in.
